Mexican Beans
Bean chilli tomato recipe:
1 red onion chopped fine
2 cloves of garlic minced
1 fresh chilli
1 capsicum cubed
1 tsp cumin
1 tsp cinnamon
2 tsp cayenne pepper
2 cans chopped tomatoes
1 cup cooked chickpea
1 cup cooked red kidney beans
1 cup cooked black beans
pinch of salt and black pepper
1. Cook the onion, garlic and chilli on olive oil or water for a couple of minutes.
2. Add the capsicum, cumin, cinnamon and cayenne pepper. Let it cook for another 2 minutes, add the chopped tomatoes, the chickpeas, the beans and a pinch of salt. Let it cook for about 10-15 minutes and it's ready to go!
