Cashew spread
Cashew spread is our new addiction at home. It matches nicely our favourite roasted veggies, it is a great salad dressing and obviously suits perfectly our tapioca crepes.
All you need to do is blend all the ingredients below. Make sure it’s well blended so you achieve the right smooth texture:
1 generous cup of raw cashews soaked for at least 4 hours, or ideally overnight. Drained and rinsed
2 tablespoons nutritional yeast
2 tablespoons lemon juice
3/4 teaspoon garlic powder or 1 crushed garlic clove
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup water, more as needed to achieve a creamy texture
Voila!
This spread matches perfectly sun dried tomatoes, rocket, basil and olives, which are the ingredients used on the photoshoot.
You can also quickly prep our mexican beans to add to you tapioca crepe with the cashew spread!
